PAPA'S SPICY
MEATLOAF MIX.
I made this for the office just to try the salsa mix in other things and they love it. I started to tell them and they said no you need to make it into a mix. My husband is the meatloaf maker in the family so this is his recipe. That's why I called it Papa's spicy meatloaf. It really is excellent. There is a gal in the office that hasn't eaten meatloaf in years because she doesn't like meatloaf. To be nice she tried it and loved it. She asked for three bags. It really is good and I'm really please everyone has taken to it.
Take two pounds of lean ground beef or turkey, two cans of drained Mexican tomatoes, one egg and one cup of Italian bread crumbs. Mix well with meatloaf organic herb mix. Cook at 375 degrees for 1 hour and 30 minutes. For something special, take your regular size muffin tins and fill them to the rim. Cook for 25 minutes at 375. They are fun and great for parties too. You can make this with Italian tomatoes with peppers instead of the Mexican ones if you would like. Then add your favorite sauce for the top of the meatloaf.
Ingredients: cilantro, minced onion, chili flakes, sea salt, pepper, Italian seasonings, garlic powder.
