  Mini Bran Muffins

Ingredients:
2 cups stone ground whole wheat flour
1-1/2 cups wheat bran
3/4 tsp fine sea salt
1-1/4 tsp baking soda
2 T raw natural cane sugar
2 cups yogart
1 egg, lightly beaten
1/2 cup light honey- like clover honey
2 T melted butter
1 cup raisins, nuts or chopped dried fruit (optional)
Instructions:
Having a Luncheon this is a great muffin to go with my Crab Pasta Salad Dish.

Preheat oven 425 degrees and middle rack.

In a medium bowl, combine the flour, wheat bran, salt, baking soda and sugar. Beat together the yogurt, egg, honey and butter in a second larger bowl. Add the dry ingredients and fold in until everything comes together. Fold in any optional raisins, nuts and the like. Resist over mixing. Grease mini-muffin tin with butter. Fill each ¾ full. Bake 10-15 minutes, until muffins are golden on top and cooked through. You can also make larger muffins in standard size muffin pan but you need to bake about 5 minutes longer.
